How To Make Mexican Grilled Corn
Ingredients:
- Corn on the cob
- 1tsp smoked paprika
- 1tbsp ground chili powder
- ½ cup mayonnaise
- 1tbsp lemon juice
- ¼ cup butter
- ½ cup cheese
- Salt to taste
- 1 sliced lime
Method:
It takes 10 minutes to prepare this and 15 minutes to cook. Delicious Mexican grilled corn is prepared in 25 minutes.

Step 1:
Preheat your grill so that it reaches a high heat that is required and oil the grate so the corn does not stick when you put it on.
Step 2:
In a large bowl mix together mayonnaise, lime juice, chili powder and the smoked paprika in a bowl. Whisk all these ingredients together till they form a smooth mixture. Refrigerate this till cold.

Step 3:
In a large pot place water and salt. Bring this salt water to a boil, when it boils place in it the 8 corns and boil them for 5 minutes. Once done take them out and drain off the excess water.
Step 4:
Place these corns on a hot grill and cook this on the grills till the corn begins to get brown and gets caramelized; this takes around 2-3 minutes. Keep turning the side of the corn so each side is cooked evenly and completely. Do this each minute or so. They will be slightly charred and caramelized.

Brush this caramelized corn with the melted butter and the sauce made with the mayonnaise until the entire corn is coated with it. Once coated sprinkle on it the grated cojita cheese and serve it with the slices of lime.
